Cajun Shrimp & Grits

1 ¼ lbs of medium shrimp, peeled
1 T olive oil 4-6 slices of bacon, cooked crispy
1 c chopped onion
1 clove of garlic
1 t Cajun seasoning
2 ¼ c water
1 T butter
1 c milk
1 c quick cooking grits
4 oz sharp cheddar, shredded

Directions:

Cook bacon in skillet until done reserving drippings in pan. Sauté chopped onion in drippings for 2 minutes then add garlic for 1 minute. Add shrimp to pan, sprinkle with Cajun seasoning and cook for 3 minutes turning once. Add ¼ cup water, scraping pan to loosen browned bits. Remove from heat; add butter, stirring to melt. Cover and keep warm.
Bring milk, pinch of salt, and 2 cups of water to boil over medium heat. Reduce heat. Gradually add grits and cook until thick and bubbly (about 5 minutes), stirring constantly with whisk. Remove grits from heat; add cheese, stirring with a whisk until cheese melts.
Spoon grits evenly onto 6 plates. Top evenly with shrimp & bacon.
